Ликопин – невитаминный каротиноид, обладающий потенциальными антиоксидантным, антиканцерогенным, иммуномодулирующим, кардиопротекторным, антиатерогенным, радио- и фотозащитным свойствами. В организме человека ликопин не синтезируется и поступает с пищевыми источниками, главным образом с томатами и томатсодержащими продуктами.</p><p>Цель настоящего исследования – оценить уровень потребления ликопина и структуру его основных пищевых источников в питании лиц молодого возраста и сравнить эффективность использования частотного метода и метода 24-часового воспроизведения.</p></sec><sec><title>Материал и методы</title><p>Материал и методы. В специализированные анкеты-опросники были включены основные и дополнительные источники ликопина. В опросе приняли участие 106 студентов. По уровням поступления ликопина сформированы 6 групп потребления.</p></sec><sec><title>Результаты</title><p>Результаты. Наибольшая доля в выборке, по данным метода 24-часового воспроизведения и частотного метода, принадлежит группам с высоким уровнем поступления ликопина. Приоритетными источниками в данных группах являются томаты и кетчуп. Частотный метод позволил установить пищевые источники, присутствующие чаще других в рационе респондентов. К ним относились свежие томаты, кетчуп и томатсодержащие продукты фастфуда (с различными показателями частоты включения для отдельных видов продуктов). Дополнительные источники ликопина отсутствовали в рационе большинства опрошенных.</p></sec><sec><title>Заключение</title><p>Заключение. Результаты, полученные с помощью указанных методов, не противоречат друг другу. Комплексное применение методов позволяет получить данные об уровнях поступления ликопина и его пищевых источниках, присутствующих в рационе. С помощью метода 24-часового воспроизведения количественно установлены уровни поступления ликопина и его приоритетные источники. Данные частотного метода характеризуют весь спектр источников ликопина, присутствующих в рационе.</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Introduction</title><p>Introduction. Lycopene is a non-vitamin carotenoid possessing antioxidant, anti-carcinogenic, immunomodulatory, cardioprotective, antiatherogenic, radio-and photoprotective properties. Lycopene not being synthesized in humans, it intakes from food sources, mainly tomatoes and tomato-containing products. </p><p>The aim of this study is to assess the level of intake of lycopene and its main food sources in the diet of young people and compare the effectiveness of the 24-hours diet recall and food-frequency questionnaire method. </p></sec><sec><title>Material and methods</title><p>Material and methods. The specialized questionnaires contained the main and additional food sources of lycopene. The survey included 106 students. There were formed 6 consumption groups according to the levels of lycopene intake. </p></sec><sec><title>Results</title><p>Results. According to the 24-hour diet recall and food-frequency questionnaires the largest share in the sample belongs to groups with high levels of lycopene intake. Tomatoes and ketchup are priority sources in these groups. The food-frequency questionnaire method allowed estimating the food sources present more often than others in the diet of the respondents. These included raw tomatoes, ketchup, and tomato-containing fast food products (with different frequencies for individual types of products). There were no additional sources of lycopene in the diet of the majority of respondents. </p></sec><sec><title>Conclusions</title><p>Conclusions. The results obtained using these methods do not contradict each other. The complex using of the methods allows obtaining data on the levels of lycopene intake and its food sources present in the diet. The levels of lycopene intake and its priority sources were quantified using the 24-hour recall.
