По сравнению с пришлым населением коренные жители Арктики достоверно больше потребляют хлебобулочных изделий, мясопродуктов (за счёт оленины), рыбы и рыбопродуктов, и меньше - молочных продуктов, овощей и грибов, фруктов, ягод, сухофруктов, овощных, фруктовых и плодово-ягодных соков. При анализе химического состава рациона по сравнению с показателями пришлого населения у коренного была выявлена его достоверно более высокая калорийность за счёт большего содержания в нём белка (18% по калорийности). Содержание жира в рационе коренного населения было практически близко к рекомендуемым величинам (30% по калорийности), а у пришлого превышало их (33%). У коренного населения по сравнению с пришлым отмечено более низкое содержание в рационе общего и животного жира, моно- и дисахаров на фоне меньших значений индекса массы тела (ИМТ) (27,2 и 28,8 кг/м2 соответственно) и жировой массы. На показатели состава тела оказывали влияние и генетические факторы. Коренное население по сравнению с пришлым в 2 раза меньше потребляло витамин С, что было связано с достоверно более низким содержанием в их рационе овощей, фруктов, ягод и фруктовых соков, и Са при неблагоприятном соотношении с фосфором Са:Р (1:2,5) на фоне недостаточного поступления молочных продуктов, и больше - натрия за счёт консервированной (копченой, вяленой и солёной) рыбы. В то же время у коренных жителей по сравнению с некоренными отмечались достоверно более высокие уровни трансфераз печени, что могло быть связано с большим потреблением этанола. Таким образом, особенности пищевого статуса коренного и пришлого населения Арктики связаны с этногенетическими факторами, традициями питания и образом жизни.</p></abstract><trans-abstract xml:lang="en"><p>The study of actual nutrition and nutritional status was conducted in 180 residents of the settlements of Tazovsky and Gyda of the Yamal-Nenets Autonomous District. In comparison with the out-of-town population, Arctic indigenous people reliably consume bakery products, meat products (due to venison), fish and fish products, and less - dairy products, vegetables and mushrooms, fruits, berries, dried fruit, vegetable, fruit and fruit juices. When analyzing the chemical composition of the diet, in comparison with the indices of the newborn population, the caloric content of the ration was significantly higher because of its higher protein content (18% of calories). The fat content in the diet of the indigenous population was almost close to the recommended values (30% by caloric content), while in the alien population it exceeded them (33%). The indigenous population, in comparison with the out-of-home population, had a lower content of total and animal fat in the diet, mono- and disaccharides against a background of lower BMI (27.2 kg / m2 and 28.8 kg / m2, respectively) and fat mass. Body factors also were affected by genetic factors.
