Синтетические пищевые продукты, в том числе культивированное мясо, обещают множество преимуществ, но требуют тщательной экспертизы безопасности перед массовым внедрением. Потенциальные риски для здоровья, связанные с потреблением культивированного мяса, могут отличаться для разных групп населения. Определение целевых групп потребителей позволит учесть индивидуальные факторы риска и разработать соответствующие меры предосторожности.</p><p>Цель исследования – анализ опасности культивированного мяса и прогнозирование групп потенциальных потребителей для адресного информирования о неблагоприятных последствиях при его потреблении.</p></sec><sec><title>Материалы и методы</title><p>Материалы и методы. Проведены систематический анализ научной литературы и социологическое исследование среди 423 жителей Пермского края (февраль – август 2023 г.). Данные были обработаны с помощью SPSS for Windows 21.0.</p></sec><sec><title>Результаты</title><p>Результаты. Потенциальная опасность культивированного мяса связана с наличием в нём химических загрязнителей, изменением биологической ценности белка и возможной гиперчувствительностью иммунной системы человека при потреблении такого продукта. Исследование показало, что уязвимость разных возрастных групп населения при включении в рацион культивированного мяса не будет одинаковой. Более 45% респондентов, в первую очередь молодые люди, готовы употреблять культивированное мясо. До 22% опрошенных готовы включать культивированное мясо в рацион детей, что делает эту возрастную группу наиболее уязвимой. Готовность употреблять культивированное мясо повышается при позитивном социальном влиянии (решение проблем сельского хозяйства, экологии и биологии).</p></sec><sec><title>Ограничения исследования</title><p>Ограничения исследования. Все участвовавшие в исследовании респонденты были жителями Пермского края.</p></sec><sec><title>Заключение</title><p>Заключение. Результаты исследования подчёркивают необходимость информирования целевых групп о рисках, связанных с культивированным мясом, с учётом возрастных особенностей и индивидуальных факторов риска. Полученные данные могут стать основой рекомендаций по обеспечению безопасности при употреблении культивированного мяса.</p><p>Соблюдение этических стандартов. Социологическое исследование получило положительное заключение локального этического комитета ФБУН «ФНЦ МПТ УРЗН» Роспотребнадзора – протокол заседания локального этического комитета № 2 от 10.02.2022 г. Synthetic food products, including cultured meat, promise many benefits but require the careful assessment of the safety before mass introduction. The potential health risks associated with the consumption of cultured meat may vary among different populations. Identifying target consumer groups will allow individual risk factors being taken into account and appropriate precautions developing.</p><p>The aim of the study was to analyse the hazards of cultured meat and predict the groups of potential consumers for targeted information on adverse effects from its consumption</p></sec><sec><title>Materials and methods</title><p>Materials and methods. A systematic analysis of scientific literature and a sociological study among four hundred twenty three residents of the Perm region (February-August 2023) were conducted. The data were processed using SPSS for Windows 21.0.</p></sec><sec><title>Results</title><p>Results. Potential hazards in the consumption of cultured meat are related to the presence of chemical contaminants, possible immune system hypersensitivity and changes in the biological value of protein. The study showed that different age groups have varying degrees of vulnerability to these hazards. More than 45% of the respondents are willing to consume cultured meat, especially young people. About 22% of the respondents are willing to include cultured meat in the diet of children, making them the most vulnerable. Willingness to consume cultured meat increases with positive social influence (addressing agricultural, environmental, and biological issues).</p></sec><sec><title>Limitations</title><p>Limitations. Only residents of Perm Krai are represented among the respondents who participated in the survey.</p></sec><sec><title>Conclusion</title><p>Conclusion. The results of the study emphasise the need to inform target groups about the risks associated with cultured meat, taking into account age-specific and individual risk factors. The findings may form the basis for recommendations to ensure the safety of cultured meat before consumption.</p><p>Compliance with ethical standards.
